Ingredients for 1 servings:
- ¼ butternut squash, diced
- 125 g sugar
- 125 ml water and a little more for the pumpkin
- 3 cinnamon sticks or 3 tsp cinnamon powder
- 7 cloves or 1.5 tsp clove powder
- 7 allspice berries or 2 tsp allspice powder
- ½ tsp cinnamon powder
- ¼ tsp cardamom powder
- ¼ tsp nutmeg, freshly grated
- ¼ tsp ginger powder
- 1 vanilla pod(s) or 1 packet of vanilla sugar
- 200 ml milk
- 2 tbsp pumpkin puree
- 2 tbsp syrup
- 1 cup of strong espresso, approx. 125 – 150 ml

- Cinnamon powder
- Nutmeg, freshly grated

For the pumpkin spice syrup, prepare the pumpkin puree. If you want to make a pumpkin spice latte, you should prepare 1-2 additional tablespoons of pumpkin puree per glass or cup. 1 pumpkin yields about 8-10 tablespoons of pumpkin puree. For the pumpkin puree, be sure to peel the pumpkin. Then, in a lidded saucepan with a little water, cook over medium heat for about 5-10 minutes, depending on how large the pumpkin was cut, until soft. Once the pumpkin is soft enough, mash it with a fork. Then press this puree through a fine sieve again. Halve the vanilla pod and add it to the pumpkin puree along with the remaining syrup ingredients. Simmer for about 10 minutes, stirring constantly. Allow the syrup to cool in the pan. Then remove all the spices and pour the syrup into a 150g jam jar. The syrup will keep in the refrigerator for up to two months. The syrup can be added to coffee or warm milk, or used as a topping for yogurt or ice cream. Please measure carefully, as the syrup is very sweet. For the Pumpkin Spice Latte, put 1-2 tablespoons of fine pumpkin puree into a large glass. Then carefully pour 1-2 tablespoons of the syrup over the pumpkin puree. Heat the milk in a saucepan, froth it with a milk frother until frothy, and pour it into the glass. Then make a strong espresso and carefully pour it into the glass to keep the individual layers separate until serving. Sprinkle with cocoa, cinnamon, and nutmeg as decoration and serve. Stir the Pumpkin Spice Latte well with a long-handled spoon before enjoying.
