Ingredients for 2 servings:
- 2 slices of bread (grain bread)
- 1 can of white beans (canellini beans), approx. 400 g
- 1 avocado(s)
- 3 tbsp lemon juice
- 1 tbsp olive oil
- 1 handful of basil
- 1 garlic clove(s)
- salt and pepper
- nutmeg
- 200 g cherry tomatoes
- 2 garlic cloves
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar, dark
- salt and pepper
- Sugar
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
vegan and high in protein
Halve the cherry tomatoes and toss with the remaining ingredients. Season with salt, pepper, and a pinch of sugar. Spread on a baking sheet and braise in the microwave at 300W + grill for 15 minutes. Blend the ingredients for the avocado bean paste in a blender and season with salt, pepper, and a pinch of nutmeg. Toast two slices of seeded bread in a toaster, spread with the avocado bean paste, and top with the braised tomatoes.
