Avocado and tomato salad with feta and mustard vinaigrette

Ingredients for 2 servings:

  • 1 avocado(s)
  • 2 tomatoes
  • 100 g feta cheese
  • 2 tbsp sunflower seeds
  • 50 ml water
  • 15 ml white wine vinegar or white balsamic vinegar
  • 10 ml oil
  • ½ tsp salt
  • 1 tsp sugar
  • 1 tsp mustard
  • n. B. basil leaves

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Light yet filling

Dice the avocado, tomatoes, and feta cheese and place them in a bowl. Whisk together the water, vinegar, oil, salt, sugar, mustard, and basil to make a vinaigrette, allowing the mustard to create an emulsion. Pour the mixture over the salad. Toast the sunflower seeds in a pan without oil and sprinkle over the salad.
