Avocado – Mango – Salsa with pork fillet

Ingredients for 4 servings:

  • olive oil
  • 800 g pork fillet(s)
  • Salad, for garnishing
  • Salt
  • black pepper
  • Sauce (salsa):
  • 2 mangoes
  • 1 cucumber(s), Lebanese
  • 1 avocado(s)
  • 5 spring onions, cut into rings
  • 3 tbsp lemon juice, freshly squeezed
  • 3 small red chili peppers, finely chopped
  • Salt
  • black pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Dice the mango, cucumber, and avocado. Gently combine the salsa ingredients and season to taste. Brown the fillets in oil on all sides over medium heat for about 20 minutes, then let them rest for 5 minutes. Cut into thick slices. Serve on a salad with baguette or ciabatta.
