Ingredients for 4 servings:
- 100 g mayonnaise
- 40 g tomato ketchup
- 1 shot of cognac
- 200 g crab (frozen)
- 2 avocados
- 1 dashes Tabasco
- ½ tsp sugar
- 1 dashes Tabasco
- ½ small lemon(s)
- salt and pepper
- possibly caviar and chicory

The shrimp cocktail from Jimmy Lee’s Staten Island Lounge!
Combine mayonnaise with ketchup, cognac, Tabasco, sugar, and lemon juice; season with salt and pepper. Thaw the frozen crab, dry it on a kitchen towel, and stir it in. Cut the avocados in half and remove the pits. Pour the crab sauce into the hollow. Garnish with caviar and some crisp chicory leaves, if desired. A fresh appetizer that’s always a hit.
