Avocado soup

Ingredients for 4 servings:

  • 1 small onion(s)
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 liter meat broth
  • 2 avocados, ripe
  • 2 pinches of salt
  • 2 pinches of pepper
  • 2 tbsp cream

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and dice the onion. Melt the butter and fry the diced onion until translucent, stirring constantly. Sprinkle the flour over the onion and fry, stirring constantly, until golden yellow. Gradually add the meat stock and bring the soup to a boil, stirring constantly. Cover and simmer the soup gently for 10 minutes over very low heat. Peel and halve the avocados, remove the stones, and mash the flesh with a fork. Add a little of the hot soup to the mashed avocados and stir until creamy. Remove the soup from the heat and stir in the avocado cream. Season to taste with salt and pepper and add the cream.
