Apricot dumplings

Ingredients for 2 servings:

  • 250 g quark (low-fat quark)
  • 2 egg yolks
  • 3 tbsp flour
  • 4 apricots, ripe
  • 4 sugar cubes
  • 50 g breadcrumbs
  • 50 g butter
  • tbsp sugar
  • 1 pinch of salt

Apricot dumplings

Place the quark on a coarsely woven cotton cloth and squeeze out any excess liquid. Then mix the quark with the egg yolks and slowly add the flour. Add just enough flour until the dough is sufficiently firm. Finally, mix in a pinch of salt. Shape the dough into a log, cut off apricot-sized pieces, and then flatten them. Cut open the apricots, remove the pits, and replace them with a sugar cube. Press the flattened quark pieces around the apricots and form dumplings. The individual apricots should be completely coated with dough. Place the dumplings in boiling water and simmer gently for about 10 minutes (on the lowest heat). Meanwhile, melt the butter in a small saucepan, add the breadcrumbs, and let them brown slightly. Season with sugar to taste. Serve the apricot dumplings on the serving plate and pour the buttered breadcrumbs over them.
