Avocado, tomato, and cucumber salad with honey and mustard dressing

Ingredients for 2 servings:

  • 250 g cocktail tomatoes
  • 50 g arugula
  • 1 cucumber(s)
  • 1 large avocado(s)
  • ½ organic lemon(s), zest and juice
  • 2 tsp mustard
  • 2 tsp honey
  • e.g. salt and pepper
  • 6 tbsp olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the salad, clean or wash the avocado, cucumber, cherry tomatoes, and arugula and chop them finely. For the dressing, combine the mustard, honey, salt, pepper, olive oil, lemon juice, and lemon zest. Mix everything together and serve. Alternatively, arrange the salad on flat plates and drizzle with the dressing.
