Ingredients for 2 servings:
- 4 small tomatoes
- 1 avocado(s), ripe
- 120 g quark
- 2 tsp lemon juice
- salt and pepper
- 4 slices of wholemeal bread
- 1 sprig basil, fresh
Instructions

Slice the tomatoes. Halve the avocado and remove the stone. Purée the flesh with the quark, salt, and pepper, or mash it with a fork, mix, and mix with a little lemon juice. Spread the avocado mixture on the bread slices and top with the tomato slices. Pluck the basil leaves from the stems and sprinkle them over the bread. Tip: I prefer low-fat quark, as avocados are also high in fat. Instead of basil, you can sprinkle cress over the bread. For 4 slices, 2 slices have 390 kcal.
