Baby bananas in coconut milk – Gluay buad chee

Ingredients for 4 servings:

  • 8 baby banana(s), yellow
  • 300 ml coconut milk
  • 200 ml water
  • 3 tsp sugar
  • 1 pinch(s) salt
  • 2 pandan leaves

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

First, peel the bananas and set them aside. Heat the coconut milk, water, sugar, and salt in a saucepan and then add the bananas and pandan leaves. Depending on how sweet you like it, you can also use just coconut milk. Simmer gently for about 10 minutes over medium heat so the bananas don’t cook too quickly. Remove the pandan leaves and serve the dessert warm. It tastes even better if you cook it the day before; then the coconut milk can be better absorbed into the bananas and the banana flavor blends with the sauce. Then just reheat briefly in the pan. It’s a simple, very delicious, authentic Thai dessert.
