Green tomato jam

Ingredients for 5 servings:

  • 1,000 g tomatoes, green
  • 500 g gelling sugar 3:1
  • 2 cinnamon sticks
  • 2 vanilla pods
  • 2 lemons

Instructions

Working time approx. 25 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 5 minutes; Total time approx. 8 hours 30 minutes

Thinly slice the green tomatoes and let them soak overnight with approximately 250g of gelling sugar, the cinnamon, and vanilla. Bring to a simmer and cook with the remaining sugar and lemon juice according to the package instructions. Test for settling. Purée the tomato jam with a hand blender, pour hot into clean jars, and seal.
