Ingredients for 1 servings:

  • 1 tsp olive oil
  • 1 large carrot(s), peeled, diced
  • 1 potato(s), peeled, diced
  • 1 tbsp peas, fresh or frozen
  • 2 tbsp corn kernels, frozen or from the can, unsalted
  • 4 tbsp water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Heat the oil in a small saucepan over medium heat. Add the diced carrots and sauté until soft and cooked through. Add the remaining ingredients and bring to a boil. Reduce the heat and cover the pan. Simmer for 15 minutes, stirring occasionally. Puree the vegetables and thin with a little water if necessary. This amount makes one serving for a 6-month-old baby and 2-3 servings for a 4-month-old baby.
