Ingredients for 4 servings:

  • 750 g pork belly
  • 3 garlic cloves, chopped
  • 1 onion(s)
  • 2 tsp pesto
  • 1 can tomato(s), peeled, chopped (330 g)
  • 1 jar tomato sauce (250 ml)
  • 1 handful of cherry tomatoes

Working time approx. 1 hour; Total time approx. 1 hour

the simplified, faster version

Cut the bacon into pieces (about 5 cm in size; the larger the pieces, the longer the cooking time) and fry them in the oil with the garlic, onion, and pesto. A little fat will render, but don’t skim it off, as it will thicken the sauce later and add a nice flavor. Season everything well with salt, pepper, oregano, and rosemary. Add the pelati (canned tomatoes). Now simmer everything uncovered over low heat for about 2 hours. Add a little water every now and then to prevent sticking. After 2 hours, add the jar of tomato sauce and a little cream. Simmer for another 30 minutes. Then add the cherry tomatoes and simmer for another 15 minutes. Season to taste and serve with fine pasta or white rice.
