Light potato salad with cucumber and dill

Ingredients for 5 servings:

  • 1 kg potatoes, mainly waxy
  • 1 large cucumber(s)
  • 2 medium-sized onions or 1 vegetable onion
  • 1 bunch dill, maybe less
  • 2 packs of ready-made salad dressing mix
  • 4 tbsp oil

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Peel the potatoes and boil in salted water as usual. After cooking, let them cool completely and then cut into cubes or slices. Wash or peel the cucumber and quarter it lengthwise. Remove the seeds, cut the rest into pieces, and add it to the potatoes. Peel the onions and dice them not too finely. Wash the dill, shake it dry, and chop it. Add the onion and dill to the bowl with the other ingredients along with about 1 1/2 packets of salad dressing mix, oil (not olive oil, as it will have a too strong flavor), and water, and mix well. Let it simmer for about 2 hours, then season with salt and pepper and/or the remaining salad dressing mix to taste. If there is too little liquid, you can add a little more water, but the cucumbers usually simmer well. This dish is also delicious with boiled potatoes. If you like, you can leave the potato skins on; the salad will then have a stronger (earthier) flavor. The salad tastes best when prepared the day before.
