Ingredients for 4 servings:
- 1 kg minced meat, mixed
- 150 g bacon, diced
- 3 eggs
- 100 g breadcrumbs
- 3 pts. bacon, sliced
- 200 g cheese (grated cheese)
- 1 onion(s)
- 1 tbsp mustard (medium hot)
- 1 tbsp honey
- 2 tbsp sauce (BBQ sauce)
- salt and pepper
- Chili flakes, coarse
- Paprika powder

Meatloaf like in the USA
First, roughly dice the onion and fry it with the bacon cubes in a pan without any fat. After frying, remove the pan from the heat and let it cool. In a large bowl, combine the ground beef, eggs, breadcrumbs, mustard, salt, pepper, paprika, and the fried bacon cubes (this is best done with your hands). Next, take the bacon slices and braid them into a lattice (see pictures). This is best done on a sheet of baking paper. Make sure there are no gaps between the slices. Once the braided bacon is complete, brush it with half of the BBQ sauce. Now you can spread the meat filling on the lattice. Leave 5 cm free on one side (the side that will ultimately form the bottom of the roll). Now it’s time to add the grated cheese. Simply spread it over the ground beef. The “bacon bomb” is now ready to be rolled. It’s important that the seam forms the bottom, meaning it’s on the bottom. Finally, mix the honey, the remaining BBQ sauce, a little water, and the chili flakes in a cup and brush the roll with it. Preheat the oven to 150°C and bake the roll in a fan-assisted oven for about 1.5 hours.
