Ingredients for 6 servings:

  • 1,000 g quark (low-fat quark)
  • 300 g sugar
  • 200 g butter
  • 6 eggs
  • 5 tbsp semolina (durum wheat semolina)
  • 3 tbsp lemon juice
  • 1 pack of pudding powder, vanilla
  • 1 packet of baking powder
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • breadcrumbs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Grease a springform pan with a little butter and spread the breadcrumbs in the pan. Cream the butter and sugar until light and fluffy and gradually add the 6 egg yolks. Then stir the drained quark mixture, the semolina and the remaining ingredients into the mixture. Beat the 6 egg whites with a pinch of salt until stiff and fold into the mixture with a broad spoon – do not stir. Pour the mixture into the pan, smooth it out and bake in a preheated oven at 175 degrees Celsius for 30 minutes. Then take the cake out of the oven and carefully loosen it from the sides of the pan using a long, flexible knife – this will prevent the cake from collapsing later! Bake for a further 30 minutes and cover with baking paper for the last 10 minutes – this will ensure the cake stays a nice golden yellow and does not get too dark. Then open the oven and let it cool slowly in the pan.
