Ingredients for 4 servings:

  • 400 g flour
  • 2 eggs
  • 1 egg yolk
  • 75 g butter
  • 125 ml white wine (see also note)
  • Fat for frying
  • Sugar
  • Cinnamon

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Melt the butter and let it cool to lukewarm. Thoroughly beat the eggs and egg yolks and mix in the butter. Add the wine and mix. Sift the flour and knead it in. Then chill the dough for an hour. Shape the dough into logs and cut into walnut-sized pieces. Roll out the pieces very thinly on a floured board. Heat the frying oil and fry two or three sheets of dough at a time. Remove from the pan, let drain, and sprinkle with sugar and cinnamon while still hot. Notes: Instead of the white wine, you can also use two liqueur glasses of rum, brandy, or cherry brandy. This recipe is very popular at Carnival!
