Ingredients for 1 servings:

  • 280 g flour
  • 1 pinch of baking powder
  • ¼ tsp salt
  • 112 g butter
  • 158 g brown sugar
  • 2 eggs
  • 3 banana(s), overripe, crushed
  • 60 ml liqueur (Bailey’s)
  • 1 tsp vanilla extract
  • 225 g cream cheese
  • 67 g sugar
  • 3 tbsp liqueur (Bailey’s)
  • 1 egg(s)
  • 3 tbsp flour

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Preheat the oven to 175°C (350°F). Beat the brown sugar and eggs until fluffy. Combine the flour and baking powder, stirring in portions. Add the butter and salt and mix until smooth. Mash the bananas, add them to the batter along with the Baileys and vanilla extract, and stir in. Set the batter aside. Beat the cream cheese with the sugar and Baileys until smooth, then add the egg and flour and mix well. Pour the batter into a greased loaf pan and spread the filling evenly on top. Then bake it in the oven for one hour on the middle rack at 180°C (350°F). Be careful not to let the cake get drafty, or it will quickly collapse.
