Baileys Sheet Cake

Ingredients
 

  • 5 Eggs
  • 1 packet Vanilla sugar
  • 150 g Powdered sugar
  • 200 ml Oil, e.g. sunflower oil
  • 300 ml Baileys
  • 400 g Flour
  • 1 packet Baking powder
  • 100 g Ground almonds
  • 25 g Cocoa powder

for soaking and decorating:

  • 6 tbsp Baileys
  • 200 g Powdered sugar
  • Chocolate sprinkles as desired

Instructions
 

  • Beat the eggs, powdered sugar and vanilla sugar on the highest setting for a few minutes until frothy. Mix the flour, almonds and baking powder and mix in briefly alternately with the oil and Baileys on a low level.
  • Line a 30 x 40 cm baking sheet with parchment paper and spread two thirds of the dough on it. Mix the last third of the batter with the cocoa powder. Spread the cocoa dough in blobs on the light colored dough and pull it through the dough in a spiral shape with a fork (like with a marble cake).
  • Bake the cake in a preheated oven at 180 degrees for about 25 minutes. Take out and let cool down briefly. Prick the cake several times with a wooden stick and brush with about 3 tablespoons of Baileys. Mix the rest of the Baileys for the icing with the powdered sugar and brush the cooled cake with it. Decorate as you wish, e.g. with chocolate sprinkles.
  • I also smeared the cake with some warmed mulled wine jelly after soaking it and then applied the glaze.
