Properly preheat the oven for muffin baking

If you want the muffins to turn out well, you need to preheat the oven properly.

  • It is best to use top/bottom heat and set it to around 180 degrees. This can vary depending on the recipe, quantity, and oven.
  • Do not put the muffins in the oven until it is actually preheated. Only then can the dough rise properly. The baking time is around 20 to 25 minutes.
  • Tip: The muffins also turn out well with circulating air if you regulate the number of degrees to 160. However, the muffins here tend to be drier.

First muffin batter, then bake

First, prepare the muffin batter completely. This is not only useful, but it is also important.

  • The muffins have to be quick in the oven after preparation. You should not waste any time here and therefore preheat the oven in advance.
  • Prepare all the baking ingredients as well, because then you will again save a lot of time. Also think of work utensils such as bowls, scales, and spoons.
  • Also, read the recipe carefully so that you can follow the steps by yourself.

Use muffin cases

The pastries work best with muffin liners. That’s why you should grab the right molds, which you can buy in almost every supermarket.

  • It is best if you place the molds in a muffin baking tray or silicone mold and only then fill in the batter.
  • If you don’t have a tin or a mold, you can also put three or four paper cups on top of each other.
  • If you only have the mold, be sure to grease it with margarine or oil. Otherwise, there is a risk of not being able to detach them, especially with muffin baking trays.
  • Tip: If you have a baking pan, you can spread it thinly with butter and do without the paper forms. Then place the greased mold in the refrigerator. This should make the muffins a little crispier on the outside.

Tips and tricks for baking muffins

Use butter at room temperature, it’s easier to whip. You can also melt them a bit in the microwave. However, it must not be hot when you use it for baking.

  • To make the muffins moist, you should first mix the wet ingredients such as milk, oil, eggs, butter, etc. well.
  • Then add the sugar. Only then do the dry ingredients follow flour, baking powder, and cocoa. You should also mix these separately first. This is where muffins differ from sponge cakes, in which butter and sugar are always mixed first.
  • Another difference to the usual sponge cake: Muffins should not be stirred for too long. Then they won’t be so fluffy. For muffins, the ingredients should only be roughly mixed.
  • Chopstick test: To make sure the muffins are done, simply poke a wooden skewer into the batter. If nothing or only a few crumbs stick to the stick, the muffin is done.
  • Muffins freeze and thaw easily.
  • Muffins look particularly nice in white baking paper cups. You can easily do it yourself. To do this, cut white greaseproof paper into squares. Place a square over a muffin well in the tin and press in the paper. If you then fill in the dough, the paper will keep its shape by itself.
