Christmas jam, apple marzipan jam

Ingredients for 1 servings:

  • 700 g apples (e.g. Granny Smith), peeled and weighed
  • 200 g marzipan paste
  • 1 orange(s), possibly untreated
  • 1 lemon(s)
  • 100 ml pear juice
  • ½ pack spice mix (Christmas Stollen spice)
  • 1 packet of vanilla sugar (bourbon vanilla sugar)
  • 500 g gelling sugar (2:1)

Working time approx. 10 minutes; Total time approx. 10 minutes

Core, peel, weigh, and chop the apples. Juice the orange, rubbing off the zest if desired. Place the apples in a saucepan with the apple pieces and cook for about 5 minutes, until the apples are nice and soft. Roughly puree with a hand blender, then stir in the gelling sugar and the juice from the squeezed lemon, and puree until finely ground. Add the marzipan flakes and melt while stirring. If the marzipan doesn’t dissolve quickly enough (you shouldn’t cook the jam with the gelling sugar for longer than 4 minutes), simply blend it again with the hand blender. Stir in the spices and add pear juice as needed. The mixture shouldn’t be too thick; in this case, add a little more juice or water. Pour into prepared jars and place the lids on for 5 minutes (to kill any germs that may be in the lids).
