Ingredients for 6 servings:
- n. B. Almond(s), chopped
- n. B. Pistachios, chopped
- 60 ml cognac
- 3 tbsp raisins
- 6 apples (Boskoop)
- 1 tsp rosemary needles
- 200 g marzipan
- 60 g butter
- powdered sugar
- 6 scoops of ice cream (vanilla)
- 1 tsp cinnamon powder
- 200 g sugar
- 2 vanilla pods

The delicious finale of Fabio’s holiday menu
Finely chop the rosemary and add it to the almonds and pistachios. Brown the almonds and pistachios with the rosemary in butter. Caramelize with sugar and vanilla bean pulp. Add the cinnamon and deglaze with cognac-marinated raisins. Cut a thumb’s width off the top of an apple, scoop out the core, and hollow out the apple. Roughly crush the marzipan in your hand, knead 1 tablespoon of the filling into the marzipan, and fill the apple with the resulting marzipan filling. Finish with a little more marzipan and place the lids slightly offset. Repeat this process with all six apples. Place the apples in a baking dish or an uncovered roasting pan and bake in the oven at 150°C for 15-20 minutes. Serve the finished baked apples with vanilla ice cream or a delicious tiramisu. Fabio’s Kitchen Tips: Tip 1: Use fresh vanilla. Tip 2: Use apples of the same size (for even cooking). Tip 3: Add a knob of butter halfway through cooking for even more flavor.
