Baked asparagus

Ingredients for 2 servings:

  • 500 g asparagus, green, cleaned, cut into pieces
  • 3 eggs
  • ½ tbsp breadcrumbs
  • 1 garlic clove(s), chopped
  • 1 tbsp parsley, chopped
  • 60 g cooked ham, diced
  • 200 ml olive oil
  • Salt
  • 1 ½ tbsp Parmesan, freshly grated
  • 1 tbsp peanuts, chopped

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Sauté the asparagus in 100 ml of olive oil and season with salt. Then remove from the pan to a bowl. Whisk the eggs, add the breadcrumbs, ham, garlic clove, and parsley, and mix well. Add the fried asparagus and mix well. Add the remaining olive oil to the pan and fry the egg and asparagus mixture in the remaining oil. Finally, sprinkle with Parmesan cheese and peanuts and serve immediately.
