  • 6 large eggs, fresh and at room temperature
  • 150 g wild salmon fillet(s), smoked
  • 4 tbsp milk
  • 4 tbsp cream
  • 2 tbsp chives, washed and finely chopped
  • 40 g butter
  • some salt and pepper, black , ground
  • 8 slices of freshly toasted bread
  • some butter for spreading

Irish scrambled eggs with smoked salmon

In a bowl, whisk the eggs with a little milk. Season with salt and pepper. Heat the butter in a large skillet over medium heat and add the egg mixture.
