Ingredients for 4 servings:
- 6 large eggs, fresh and at room temperature
- 150 g wild salmon fillet(s), smoked
- 4 tbsp milk
- 4 tbsp cream
- 2 tbsp chives, washed and finely chopped
- 40 g butter
- some salt and pepper, black , ground
- 8 slices of freshly toasted bread
- some butter for spreading
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
Irish scrambled eggs with smoked salmon
In a bowl, whisk the eggs with a little milk. Season with salt and pepper. Heat the butter in a large skillet over medium heat and add the egg mixture. Stir gently with a wooden spoon until the mixture is thickened. Remove from the heat and fold in the thinly sliced salmon, chives, and cream. Butter the toast, arrange the scrambled eggs on warmed plates, and serve.
