Ingredients for 4 servings:

  • 8 sausages (breakfast sausages), English
  • thin bratwurst, German, raw
  • 1 tsp oil
  • 225 g flour
  • 4 eggs
  • 250 ml milk
  • salt and pepper

Preheat the oven to 200°C. Pour the oil into a moderately thick, ovenproof dish. Arrange the sausages side by side in the dish. Place the dish in the oven for 10 minutes to brown the sausages. Slowly mix the flour, eggs, and half of the milk until a thick paste forms. Use a fork to do this. Then, whisk and very slowly (!) add the remaining milk. Stir constantly! Season with salt and pepper. Remove the dish from the oven, pour the batter over the sausages until they are 3/4 full, and return it to the oven for another 35 minutes. Serve with salad, mashed potatoes, vegetables, etc. A rich brown gravy is essential.
