Baked cauliflower

Ingredients for 3 servings:

  • 1 cauliflower
  • 3 potatoes
  • 1 stalk(s) leek, cut into pieces
  • 300 g minced meat, mixed
  • 250 g cheese (e.g. Gouda or Edam), grated
  • 150 ml vegetable stock
  • Salt
  • pepper
  • nutmeg

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Peel the potatoes, cut into quarters, and boil. Cook the cauliflower separately, whole, until al dente. Meanwhile, brown the minced meat with the leek. Season with salt and pepper, and deglaze with the stock. In the meantime, preheat the oven to 180°C – 200°C fan/convection oven. Cut the cauliflower into smaller pieces (florets) and place them in a baking dish with the potatoes and minced meat. Dust the cauliflower with a little nutmeg. Sprinkle the grated cheese over the cauliflower. Place in the preheated oven and bake for about 20 minutes, until the cheese is lightly browned. Serve hot.
