Ingredients for 4 servings:
- 4 eggs, separated
- 150 g butter, soft
- 150 g flour
- 1 tsp baking powder
- 50 g cheese (young Gouda)
- 25 g cheese, strong (e.g. mountain cheese or Parmesan
- 100 ml milk
- 1 pinch of salt
- 100 g grated cheese (e.g. Gouda)
- 100 g feta cheese
- 100 g mushrooms, fresh, sliced
- 125g mozzarella
- Spice(s) and herbs as desired
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Beat the egg yolks with the butter until fluffy. Grate the mild Gouda and the strong cheeses and add them to the egg yolks along with the milk, flour, and baking powder. Beat the egg whites with a little salt until stiff peaks and fold them into the batter. Bake the waffles. They shouldn’t get too dark, as they will be placed in the oven later. Top the finished waffles with feta, mushrooms, mozzarella, and grated cheese. I always season the waffles quite heavily, with chili, garlic, pepper, and oregano, but that’s a matter of taste. You can also use other spices if you like. Bake the waffles for 5-10 minutes (grill plus fan at 200°C or top/bottom heat, preheated to 220°C).
