Ingredients for 4 servings:
- 3 eggplant(s)
- 1 bunch of basil
- 1 bunch of parsley
- 2 cloves garlic
- Breadcrumbs
- olive oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes
a nice side dish for grilling or briefly frying
Finely chop the basil, parsley, and garlic and mix with the breadcrumbs and olive oil until crumbly. Cut the eggplant into thumb-thick slices, place them on a greased baking sheet, and spread with the herb mixture. Bake the baking sheet at 180°C for 35-40 minutes. The eggplant can be served warm or cold.
