Baked eggs with herb sauce

Ingredients for 4 servings:

  • 9 eggs
  • 100 g mayonnaise
  • 100 g yogurt
  • 1 tsp sugar
  • 1 tsp mustard, hot
  • 1 tsp lemon juice
  • Salt and pepper, white
  • 4 tbsp mixed herbs, chopped
  • 2 tbsp flour
  • 3 tbsp breadcrumbs
  • Oil for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Hard-boil 8 of the eggs, rinse well, and peel. Mix the mayonnaise with the yogurt, sugar, mustard, and lemon juice. Season generously and stir in the chopped herbs. Whisk the egg with salt. Coat the boiled eggs, one after the other, in the flour, beaten egg, and breadcrumbs. Chill briefly to allow the coating to set. Heat about 6 cm of oil. Slide the eggs into the pan and fry until golden brown. Remove with a slotted spoon, drain on kitchen paper, and serve hot. Tip: Lightly tap the eggs before baking to remove any loose crumbs. They would quickly turn black in the fat.
