Baked eggs with potatoes and sucuk

Ingredients for 4 servings:

  • 4 m.-sized potatoes
  • 200 g sucuk or pepper salami or similar
  • 4 eggs
  • 125 ml cream
  • 100 g cheese, e.g. Tilsiter or similar
  • 3 rosemary sprigs
  • salt and pepper
  • nutmeg
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 28 minutes; Total time approx. 38 minutes

First, boil the potatoes in water and let them cool. Peel the potatoes and dice them. Peel the sucuk and also dice them. Cover the bottom of the pan with oil and heat it. Fry the rosemary sprigs for 2-3 minutes until browned. Then fry the potatoes and sucuk for about 10 minutes. Grate the cheese and mix it with the eggs and cream. Pour the mixture into the pan, season, and stir briefly. Then place the whole thing in the oven preheated to 180°C (top/bottom rack) and bake for about 10-15 minutes, until golden brown. Suitable for breakfast or as a snack.
