I ate something similar in a Parisian brasserie

Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Toast the two slices of farmhouse bread in a toaster for about two minutes on medium heat. Then brush one side with butter and top with the cooked ham. Fry the two eggs in a little oil until fried, season with salt and pepper. Slice the tomatoes and place them on the ham sandwiches. Then place the fried eggs on top and finish with the Gouda cheese. Bake in the oven for 8-12 minutes. Serve with a mixed salad with French dressing and a glass of red wine.
