Baked feta cheese

Ingredients for 2 servings:

  • 1 pack of feta cheese
  • 1 tomato(s)
  • 1 bell pepper(s), red or orange
  • 1 garlic clove(s)
  • 1 shallot(s)
  • 1 tbsp olive oil
  • ½ tsp basil, dried
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Grease a small baking dish. Halve the feta lengthwise to create two thin slices. Finely dice the onion and garlic. Dice the tomato and bell pepper and mix with the onion and garlic. Season with basil, pepper, salt, and olive oil. Pour half of the mixture into the baking dish and spread evenly. Then place the feta on top and add the remaining tomato and bell pepper mixture. Bake in a preheated oven at 180°C for about 10-15 minutes. This goes very well with warm baguette and a nice glass of red wine.
