Baked fish fingers on onion rice

Ingredients for 1 servings:

  • 2 onions
  • 2 tbsp sunflower oil
  • 100 g cream cheese
  • 500 ml homemade vegetable broth
  • 1 tsp soy sauce
  • 1 tsp turmeric powder
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 125 g brown rice
  • 4 fish fingers
  • 1 slice(s) butter cheese

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Peel the onions, quarter them lengthwise, and cut them into strips. Fry them in a pan with the sunflower oil for 5 minutes. Add all ingredients except the rice, mix well, and bring to a boil. Then add the rice and cook over medium heat for 10-12 minutes. Season to taste and transfer to a baking dish. Arrange the fish fingers on top and top with the buttered cheese. Bake in a preheated oven at 200°C (top/bottom heat) for approximately 18-20 minutes on the middle rack and serve.
