Baked fried potatoes

Ingredients for 6 servings:

  • 2 ½ kg potatoes
  • 2 bell peppers
  • 6 Mettenden
  • 1 pack of bacon cubes, approx. 125 g
  • 50 ml oil
  • 200 ml water
  • salt and pepper
  • 1 pinch of nutmeg, freshly grated
  • 1 bunch of spring onions

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Peel the potatoes and cut into approximately 0.5 cm thick slices. Wash and slice the spring onions. Deseed, wash, and slice the bell peppers. Slice the Mettenden sausages and fry them in a pan until crispy, as best you like. Fry the bacon cubes until crispy. In a measuring jug, mix the oil with the water and the spices. Place the potato slices in a baking dish, pour the stock over them, and mix well. Then add the fried Mettenden sausages, bacon cubes, and bell pepper strips to the potatoes and mix everything together. Bake in an oven preheated to 200°C (fan oven) on the middle rack for approximately 30-45 minutes, depending on the thickness of the potatoes. Turn the mixture over after 15 minutes and repeat after the second 15 minutes. After a good 45 minutes, the potatoes are done. Finally, add the spring onions.
