Ingredients for 4 servings:
- 1,000 g potatoes
- 4 eggs
- 50 g flour
- 150 g bacon cubes
- 150 g Emmental cheese, grated
- salt and pepper

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Boil the potatoes until soft, peel, and mash. Add the eggs, flour, and bacon bits and mix into a batter. You can omit the bacon bits if you like. Season with salt and pepper. Pour the batter into muffin cups and sprinkle with grated Emmental cheese. Bake the muffins in a preheated oven at 180°C (350°F) for 40 minutes.
