Harzer potato coins

Ingredients for 2 servings:

  • 450 g potatoes, possibly ready-made from the jar
  • 100 g Harzer cheese
  • 30 g tomatoes, dried
  • 50 g diced ham, light
  • 1 small onion(s)
  • 1 egg(s)
  • 20 g potato fiber or flour
  • possibly herbs

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

with dried tomatoes, ham and onion

Peel the potatoes and boil them until tender, or use canned potatoes. Set aside and let cool. Using a hand blender, puree the Harzer cheese and egg. Add the potatoes and continue puréeing. Stir in the potato fibers. Finely chop the onion and sun-dried tomatoes and fold them into the ham cubes. Season with a few herbs, if desired. Preheat the oven to approximately 200°C. Use two spoons to form small discs from the mixture and place them on a baking sheet lined with baking paper. Decorate the discs with chives, if desired, and bake in the oven for 40-45 minutes, until the surface is nice and crispy and the inside is soft.
