Baked gnocchi with zucchini, peppers and tomatoes

Ingredients for 3 servings:

  • 600 g gnocchi
  • 200 g cream cheese
  • 200 g cottage cheese
  • 100 g tomato paste
  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 small bell pepper(s)
  • 1 small zucchini
  • 2 tomatoes
  • e.g. salt and pepper
  • e.g. oregano
  • e.g. basil
  • 100 g cheese, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Finely dice the onion and garlic. First, fry the onions in a pan until translucent, then add the garlic and continue frying briefly over low heat. Combine the cream cheese, cottage cheese, and tomato paste in a baking dish with the spices, then carefully stir in the gnocchi. Add the finely chopped bell peppers, zucchini, and tomatoes, along with the onion and garlic, and mix everything well. Finally, sprinkle the cheese over the top and bake in the oven at 180°C (top/bottom heat) for about 35 minutes.
