  • 1 red bell pepper(s)
  • 250 g mushrooms
  • 500 g pork, shredded (gyros, ready-pickled from the butcher or prepared yourself)
  • 200 g crème fraîche

  • 100 g cheese, grated (Gouda)
  • oil

Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Peel the onion, halve it, and slice it thinly. Halve the red bell pepper, remove the seeds and skins, and cut it into small strips. Clean and slice the mushrooms. Brown the gyro meat in oil over high heat, reduce the heat to medium, add the onion, strips of bell pepper, and mushrooms, and cook briefly. Season the gyro with thyme, add the crème fraîche, stir in, and let everything simmer briefly. Then transfer to a baking dish and sprinkle with coarsely grated Gouda cheese. Place the casserole on the middle rack of the oven and bake for about 15 minutes, until the cheese is lightly golden brown. Serve with flatbread, tzatziki, and coleslaw.
