Baked pork fillet

Ingredients for 4 servings:

  • 1 kg pork fillet(s)
  • 2 cans of tomatoes, chunky (medium size)
  • 3 tbsp tomato paste
  • 2 zucchinis
  • 2 bell peppers, red and yellow
  • 2 onions
  • 2 bags of cheese, grated (gratin cheese or Emmental)
  • salt and pepper
  • nutmeg
  • Paprika powder
  • Herbs as desired (e.g. oregano, thyme)
  • oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Place the canned tomatoes and tomato paste in a saucepan, heat, and mix well. Season with salt, pepper, and herbs to taste. Slice the bell peppers, zucchini, and onions and fry them lightly in a pan with oil; the vegetables should still be crisp. Season with salt, pepper, and herbs. Slice the fillet, season with pepper, nutmeg, and paprika, and sear on both sides (do not cook all the way through). Place the vegetables in a shallow baking dish and arrange the meat on top. Spread the tomato sauce over the meat and sprinkle with cheese. Bake at 200°C for about 25 minutes. Serve with baguette or pasta.
