Marzipan muffins

Ingredients for 1 servings:

  • 100 g marzipan (raw mass)
  • 2 m.-sized eggs
  • 2 tsp lemon juice
  • 150 g butter, soft
  • 100 g sugar
  • 1 pinch(s) of iodized salt
  • 175 g flour
  • 2 tsp baking powder
  • 80 g almonds (almond sticks)
  • Powdered sugar for sprinkling

Finely chop the marzipan mixture. Separate the eggs and beat the egg whites with lemon juice until very stiff. Preheat the oven to 175°C (conventional oven: 150°C, gas mark 2). Beat the butter, sugar, salt, and egg yolks with a hand mixer until fluffy. Sift in the flour and baking powder and mix in. Add the marzipan and almond slivers and mix in. Fold in the beaten egg whites. Nestle two paper muffin cases on a baking tray and fill two-thirds full with batter. Bake in the preheated oven on the middle rack for about 25 minutes. Sprinkle with powdered sugar.
