Baked herb potatoes French style

Ingredients for 4 servings:

  • 1 kg potatoes, smaller, waxy
  • 2 onions, mild white
  • 6 garlic cloves
  • 4 sprigs rosemary
  • 4 sprigs of thyme
  • 4 sprigs of sage
  • 4 sprigs of oregano
  • 4 bay leaves, fresh
  • 6 tbsp olive oil
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Preheat oven to 200°C. Peel and wash the potatoes, then slice them lengthwise. Peel the onions and garlic. Cut the onions into approximately 4 mm thick slices, leaving the garlic whole. Wash the herbs and roughly chop the sprigs. Place the potatoes in an ovenproof dish with the onions, garlic, herbs, and bay leaves. Pour approximately 1/8 liter of water onto the sides. Drizzle the potatoes with olive oil and season with salt. Bake on the middle rack of the oven for approximately 45-50 minutes, until soft and browned. Serve with French minced chard balls.
