Ingredients for 4 servings:

  • 1 kg potato(s), floury
  • Salt
  • 4 m.-sized onion(s)
  • 180 g butter
  • Nutmeg, freshly grated
  • Pepper, freshly ground

Galette Lyonnaise

Peel the potatoes, boil them in salted water until tender, and mash them. Peel the onions and slice them thinly. Heat 4 tablespoons of butter in a large saucepan and fry the onions until golden brown. Add half of the remaining butter and the mashed potatoes. Season well with nutmeg, salt, and pepper. Mix everything together well, pile the mixture onto a baking sheet, and spread it into a thick flatbread. Sprinkle the remaining butter on top in flakes. Broil for 3-5 minutes until the surface begins to brown. These au gratin potatoes are delicious with steaks or other grilled meats.
