Ingredients for 4 servings:

  • 400 g flour
  • 1 cube of yeast
  • 40 g sugar
  • 250 ml milk, lukewarm
  • 40 g butter
  • 2 eggs, including the yolk
  • 1 pinch of salt
  • 1 liter oil, for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Yeast dough baked

First, bring all ingredients, except the powdered sugar, to room temperature. Then, place the flour in a bowl, make a well, and crumble in the yeast. Add 1 teaspoon of sugar and 1 tablespoon of milk and knead the resulting dough into a dough ball. Let the dough rest in a warm place for 15 minutes. Dissolve the butter and remaining sugar in the remaining milk, then stir in the egg yolks and salt. Add the milk mixture to the dough ball and knead into a smooth dough. Cover again and let rest in a warm place for 30 minutes; the dough should double in size. Heat the oil in a wide saucepan or deep fryer. Using a cold tablespoon, scoop out pieces of the dough and fry them in batches in the hot oil for about 2 minutes on each side until golden brown. Drain the dough balls on kitchen paper and dust with powdered sugar. Applesauce or vanilla sauce go well with this.
