Baked peppers with feta cheese à la Michelle

Ingredients for 4 servings:

  • 4 bell peppers, red
  • 200 g feta cheese
  • ½ bunch parsley
  • 2 tbsp yogurt
  • 1 egg(s)
  • 1 tbsp lemon juice
  • pepper, black
  • oregano
  • some olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat oven to 220°C (top/bottom heat). Line the baking tray with aluminum foil or use a casserole dish. Rinse the peppers, pat dry, halve vertically (from stem to tip), and remove the seeds. Finely mash the feta with a fork. Wash the parsley, shake dry, and chop. Then mix with the yogurt and beaten egg into the cheese. Fill the pepper halves with the cheese mixture and place them side by side on the baking tray or in the casserole dish. Drizzle with a little lemon juice, sprinkle with pepper and oregano, drizzle with a little oil, and bake in the center of the oven for about 30 minutes. Serve warm with bread. Per serving: about 270 kcal
