Small mini pizzas

Ingredients for 8 servings:

  • 400 g flour, for the dough
  • 42 g yeast, fresh
  • 200 ml water, lukewarm
  • 1 pinch(s) of sugar
  • some salt
  • 10 tbsp olive oil
  • 2 red bell peppers
  • some mushrooms
  • 50 g salami, sliced
  • 1 jar olives, black or green
  • 400 g cocktail tomatoes, sliced
  • 1 small can of tomatoes, diced
  • 300 g cheese, grated pizza cheese
  • oregano

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Put the flour in a bowl and make a well in the center. Mix the water with the yeast in the well. Add the olive oil and, if desired, some crushed garlic. Add the sugar and salt and gradually add more flour, starting from the center, until you have a smooth dough. Let it rest. Finely dice the bell peppers and thinly slice the mushrooms, olives, and cherry tomatoes. Once the dough has risen, punch it down and divide it into small balls. Roll these out with a rolling pin into small, round flatbreads. Place the mini pizzas on the baking sheet and top with the diced tomatoes, salami, bell peppers, olives, cherry tomatoes, and cheese as desired. Season with oregano. Bake in a preheated oven at approx. 200°C. The pizzas can be customized to your taste; for example, they are also delicious with bacon and diced onions!
