Ingredients for 4 servings:
- 700 g roast pork (pork lung roast)
- ¼ liter cream
- 100 g cheese, grated
- 2 eggs
- salt and pepper
- Oil or margarine for the pan
- Parsley
Instructions

for quick cooking and long enjoyment!
Cut the meat into approximately 2 cm thick pieces, flatten, season with salt and pepper, and sear on both sides in oil (if you like, you can also use margarine for a better flavor). Keep warm. Mix the cheese, eggs, and cream with parsley, salt, and pepper, and season to taste. Cover the medallions with the mixture and bake over high heat. Croquettes and some steamed vegetables of any kind go best with this.
