Baked potatoes with bacon

Ingredients for 2 servings:

  • 600 g potatoes
  • 100 g bacon, e.g. from South Tyrol
  • 2 m.-sized onion(s)
  • 2 m.-sized eggs
  • 150 ml cream
  • 100 g cheese
  • 50 g butter
  • e.g. salt and pepper
  • Paprika powder

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Hangover breakfast

Peel and halve the potatoes. Briefly immerse them in cold water to remove any starch. Change the water before boiling the potatoes. Boil the potatoes in salted water for about 5 minutes. Meanwhile, cut the bacon into strips or cubes. Add it to the pan with the onion rings and butter and fry. Beat the eggs and season with pepper, salt, and paprika, then mix with the cream. Preheat the oven to 180°C (fan oven) and place a bowl or casserole dish with a knob of butter inside. Drain the potatoes and cut them into slices about 2 mm in diameter. Then place these in the preheated and greased dish. Add the fried bacon and onions to the potatoes. Once everything is in the bowl, pour the egg and cream mixture over the potatoes and sprinkle with grated cheese. Then bake for 15-20 minutes. After cooking, let the steam cool for about 5-10 minutes in the partially open oven.
