Baked potatoes with fresh herbs

Ingredients for 4 servings:

  • 4 large potatoes
  • olive oil
  • Salt
  • Herbs, fresh, as desired, depending on size leaves or twigs

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Not only does it taste good – it also looks great!

Wash the potatoes (scrub with a brush if necessary) and cut them in half crosswise. Line a baking sheet with parchment paper. Place the potatoes cut-side up on the baking sheet and brush the cut surface with oil and salt. Place a sprig, stem, or leaf of one of the herbs on top and turn the potato over, so it’s cut-side down on the baking sheet. Brush the back of the potato with oil and salt as well. Bake at approximately 180°C (convection oven) for approximately 40 minutes, depending on the size of the potatoes. Test for doneness with a wooden skewer if necessary. Arrange the potatoes cut-side up on a platter or plate. These potatoes are easy to prepare and are a real eye-catcher on any table. They’re perfect for barbecues and are always a hit at parties or buffets. If you don’t like olive oil, simply substitute it with another oil. They also taste great as a vegetarian main course with “Maja’s Tzatziki.”
