Baked rhubarb

Ingredients for 1 servings:

  • 500 g rhubarb, approx. – quantity
  • 60 g sugar
  • 40 ml water, for cooking rhubarb
  • 100 g flour
  • 50 g sugar
  • 60 g butter, cold
  • 1 pinch of salt
  • some cinnamon powder
  • 2 tsp vanilla sugar, homemade bourbon vanilla sugar

if there are leftover rhubarb

This dessert can be made with any amount of rhubarb—it’s the perfect way to use up leftovers. Clean the rhubarb, peel off the skin, and cut into approximately 2 cm pieces. Cook the rhubarb pieces with the sugar and water (use a little, as the rhubarb absorbs water) for about 4-5 minutes. Pour into a small, ovenproof dish. Mix the flour, sugar, vanilla sugar, salt, and cinnamon in a bowl. Add the cold butter in small pieces and quickly knead into crumbles. Place the crumbles on the cooked rhubarb and bake in a preheated oven at 200°C (400°F) or in a combi-microwave at 180°C (350°F) with the grill activated (level 2) for about 12-15 minutes.
