Baked salmon with fried potatoes

Ingredients for 2 servings:

  • 2 salmon fillets, size according to appetite
  • lemon juice
  • 100 g cheese in one piece (e.g. Gouda)
  • 2 shallots
  • 2 garlic cloves
  • Herbs of Provence
  • salt and pepper
  • 5 large potatoes, mostly waxy
  • olive oil
  • Fried potato seasoning

Peel the potatoes, cut into approximately 1 cm thick slices, and boil until soft. Meanwhile, wash and dry the salmon, and drizzle with lemon juice. Finely chop the shallots and garlic. Season the fish with salt and pepper and place it in a baking dish. Spread approximately 1/3 of the shallots and garlic over the salmon, then scatter the Provençal herbs on top and grate the cheese over it. Cook the fish in a preheated oven at 180°C (top/bottom heat, slightly less with fan oven) for approximately 15 minutes (depending on the desired consistency of the fish). Add the potato slices to the hot olive oil in the pan and fry one side until crispy. Then turn the slices over and add the remaining shallots and garlic. Reduce the heat and season with salt and pepper, and add the fried potato seasoning. Serve with a green salad. If the dish is too dry for you, you can make a white wine and lemon sauce to complement the fish.
